I. Tổng quan về quy trình chiết xuất lycopene từ chất thải chế biến cà chua

Quy trình chiết xuất lycopene từ chất thải chế biến cà chua đang trở thành một chủ đề nóng trong ngành công nghiệp thực phẩm. Lycopene, một carotenoid tự nhiên, có nhiều lợi ích cho sức khỏe, bao gồm khả năng chống oxy hóa mạnh mẽ. Việc tối ưu hóa quy trình chiết xuất không chỉ giúp tăng cường hiệu quả thu hồi lycopene mà còn giảm thiểu lãng phí từ quá trình chế biến cà chua. Chất thải chế biến cà chua, bao gồm vỏ, hạt và bã, chứa một lượng lớn lycopene, nhưng thường bị bỏ đi hoặc sử dụng không hiệu quả. Do đó, nghiên cứu này nhằm mục đích tối ưu hóa quy trình chiết xuất lycopene từ những chất thải này.

1.1. Tầm quan trọng của lycopene trong sức khỏe con người

Lycopene được biết đến với khả năng chống oxy hóa mạnh mẽ, giúp bảo vệ tế bào khỏi tổn thương do gốc tự do. Nghiên cứu cho thấy lycopene có thể giảm nguy cơ mắc các bệnh mãn tính như ung thư và bệnh tim mạch. Việc chiết xuất lycopene từ chất thải chế biến cà chua không chỉ mang lại lợi ích sức khỏe mà còn tạo ra giá trị kinh tế từ nguồn nguyên liệu dồi dào này.

1.2. Các nguồn chất thải chế biến cà chua

Chất thải chế biến cà chua bao gồm vỏ, hạt và bã, chiếm khoảng 10-40% tổng khối lượng cà chua được chế biến. Những chất thải này thường bị bỏ đi hoặc sử dụng làm thức ăn cho gia súc. Tuy nhiên, chúng chứa một lượng lớn lycopene và các hợp chất có lợi khác, có thể được tận dụng để sản xuất thực phẩm chức năng.

II. Vấn đề và thách thức trong quy trình chiết xuất lycopene

Mặc dù có nhiều lợi ích từ việc chiết xuất lycopene, nhưng quy trình này vẫn gặp phải nhiều thách thức. Một trong những vấn đề chính là lựa chọn dung môi phù hợp cho quá trình chiết xuất. Các dung môi khác nhau có thể ảnh hưởng đến hiệu suất chiết xuất và chất lượng của lycopene thu được. Ngoài ra, điều kiện chiết xuất như nhiệt độ và thời gian cũng đóng vai trò quan trọng trong việc tối ưu hóa quy trình.

2.1. Lựa chọn dung môi cho quy trình chiết xuất

Việc lựa chọn dung môi là một yếu tố quyết định trong quy trình chiết xuất lycopene. Các dung môi như ethanol, acetone và ethyl acetate đã được nghiên cứu để xác định hiệu suất chiết xuất tối ưu. Mỗi dung môi có những ưu điểm và nhược điểm riêng, ảnh hưởng đến khả năng hòa tan và thu hồi lycopene.

2.2. Ảnh hưởng của nhiệt độ và thời gian đến hiệu suất chiết xuất

Nhiệt độ và thời gian chiết xuất là hai yếu tố quan trọng ảnh hưởng đến hiệu suất thu hồi lycopene. Nghiên cứu cho thấy rằng nhiệt độ cao có thể làm tăng tốc độ chiết xuất, nhưng cũng có thể dẫn đến sự phân hủy của lycopene. Do đó, việc xác định điều kiện tối ưu là cần thiết để đạt được hiệu quả cao nhất.

III. Phương pháp tối ưu hóa quy trình chiết xuất lycopene

Để tối ưu hóa quy trình chiết xuất lycopene, nghiên cứu đã áp dụng phương pháp bề mặt phản ứng (Response Surface Methodology - RSM). Phương pháp này cho phép xác định các yếu tố ảnh hưởng đến quy trình chiết xuất và tìm ra điều kiện tối ưu nhất. Bằng cách thay đổi các yếu tố như tỷ lệ dung môi, nhiệt độ và thời gian, nghiên cứu đã xác định được điều kiện tối ưu cho việc chiết xuất lycopene.

3.1. Thiết kế thí nghiệm và phân tích dữ liệu

Thiết kế thí nghiệm sử dụng phương pháp bề mặt phản ứng giúp xác định mối quan hệ giữa các yếu tố ảnh hưởng đến quy trình chiết xuất. Dữ liệu thu thập được sẽ được phân tích để tìm ra điều kiện tối ưu cho việc chiết xuất lycopene từ chất thải chế biến cà chua.

3.2. Tối ưu hóa tỷ lệ dung môi và chất thải

Nghiên cứu đã chỉ ra rằng tỷ lệ dung môi trên chất thải là yếu tố quan trọng trong quy trình chiết xuất. Tối ưu hóa tỷ lệ này giúp tăng cường hiệu suất thu hồi lycopene, đồng thời giảm thiểu lượng dung môi sử dụng, từ đó giảm chi phí sản xuất.

IV. Kết quả nghiên cứu và ứng dụng thực tiễn

Kết quả nghiên cứu cho thấy rằng điều kiện tối ưu cho quy trình chiết xuất lycopene từ chất thải chế biến cà chua là sử dụng dung môi ethyl acetate với tỷ lệ 40/1 (v/w), nhiệt độ 55°C và thời gian chiết xuất 120 phút. Dưới điều kiện này, hàm lượng lycopene thu được đạt 7.391 mg/g chất khô, cùng với khả năng chống oxy hóa cao. Những kết quả này mở ra cơ hội cho việc phát triển các sản phẩm thực phẩm chức năng từ chất thải chế biến cà chua.

4.1. Ứng dụng trong ngành thực phẩm

Lycopene chiết xuất từ chất thải chế biến cà chua có thể được sử dụng để phát triển các sản phẩm thực phẩm chức năng, giúp tăng cường giá trị dinh dưỡng và sức khỏe cho người tiêu dùng. Việc sử dụng lycopene trong thực phẩm không chỉ mang lại lợi ích sức khỏe mà còn tạo ra giá trị kinh tế từ nguồn nguyên liệu dồi dào.

4.2. Tác động đến môi trường

Việc tối ưu hóa quy trình chiết xuất lycopene từ chất thải chế biến cà chua không chỉ giúp giảm thiểu lãng phí mà còn góp phần bảo vệ môi trường. Thay vì vứt bỏ chất thải, việc tái sử dụng chúng để chiết xuất lycopene sẽ giảm thiểu ô nhiễm và tạo ra giá trị từ nguồn tài nguyên sẵn có.

V. Kết luận và triển vọng tương lai của quy trình chiết xuất lycopene

Quy trình chiết xuất lycopene từ chất thải chế biến cà chua đã được tối ưu hóa thành công, mở ra nhiều cơ hội cho việc phát triển sản phẩm mới trong ngành thực phẩm. Nghiên cứu này không chỉ giúp tăng cường hiệu suất thu hồi lycopene mà còn góp phần bảo vệ môi trường và giảm thiểu lãng phí. Tương lai của quy trình chiết xuất lycopene hứa hẹn sẽ tiếp tục phát triển với những cải tiến về công nghệ và quy trình.

5.1. Hướng nghiên cứu tiếp theo

Các nghiên cứu tiếp theo có thể tập trung vào việc phát triển các phương pháp chiết xuất mới, hiệu quả hơn, cũng như nghiên cứu sâu hơn về các ứng dụng của lycopene trong ngành thực phẩm và dược phẩm.

5.2. Tác động đến ngành công nghiệp thực phẩm

Việc tối ưu hóa quy trình chiết xuất lycopene từ chất thải chế biến cà chua có thể tạo ra một xu hướng mới trong ngành công nghiệp thực phẩm, khuyến khích việc sử dụng các nguồn nguyên liệu tái chế và giảm thiểu lãng phí, từ đó góp phần vào sự phát triển bền vững.

Materials and Methods: - Materials: The red ripe tomato cv.

Chanoka F1 was harvested in Bac Ninh province. Tomato waste was obtained by removing the juice. Tomato paste was passed through a fruit pulper to obtain waste. Tomato waste was dried by a convective oven after that they were ground to use as material for lycopene extraction - Methods: Suitable organic solvent for lycopene extraction from tomato waste was studied ranging from single solvent (acetone, ethanol, ethyl acetate), double solvent (acetone: ethanol) and triple solvent system (acetone: ethanol: ethyl acetate).

The treatment regime (moisture content and drying temperature) of tomato waste for lycopene extract also investigated. Tomato waste, which was dried in the oven at the optimal temperature and moisture content, was used to optimize of several factors (ratio of solvent/dried tomato waste, temperature, time) influencing extraction of lycopene with the most suitable solvent by response surface methodology. - Analytical methods: Moisture content of tomato waste (%) was measured using fast moisture detector (MA37, Germany). Lycopene content was quantified by HPLC.

Antioxidant capacity of lycopene content was quantified by DPPH radical scavenging test. Main findings and conclusions The results of the present study indicated that ethyl acetate solvent proved to be the most efficient compared to other solvents for lycopene extraction. The optimal conditions for drying of tomato waste is temperature of 65oC until the moisture content of the material reached 23%. INTRODUCTION Lycopene is one of 750 carotenoids found in nature and is responsible for the red color of fruits. It is present in high concentration in red fruit and vegetable, such as tomato, gac, carrot, watermelon… (Britton, 2004).

In the food industry, lycopene is used as a natural pigment in the dyeing of food product. Besides, lycopene is also known as a potential antioxidant which is believed to be responsible for protecting cell against oxidative damage and thereby decreasing the risk of chronic diseases (Rao et al. Thus, lycopene demands on using in pharmaceutical, food, feed and cosmetic industries calls more attention nowadays. Tomato, Lycoperisicon esculentum, is one of the most widely cultivated vegetable in worldwide and known as one of fruits which are rich in lycopene.

World tomato production in 2013 was about 163 million tons of fresh fruit from an estimated 4. Tomato contains a wide variety of antioxidants including vitamin E, ascorbic acid, carotenoids, flavonoids, phenolic compounds (Sathish et al. Lycopene represents about 80-90% of total carotenoids in tomato. Lycopene is located in different fractions of tomato such as tomato skin, water insoluble fraction, and fibrous fraction including fiber and soluble solids.

Tomato processing industry produces large amounts of solid waste. It is about 10–40% of the total tomato processed in the facility and includes 33% seeds, 27% skin and 40% pulp (Topal et al. Toor and Savage (2005) indicated that 70–90% of the lycopene was associated with the water insoluble fraction and the skin. In Vietnam and other countries, the waste is usually used for animal feed or for organic fertilizer but it is not used for human consumption (Knoblich et al.

Therefore, large quantity of carotenoids is lost as waste. In addition, this waste has a high moisture content that makes it susceptible to microbial proliferation and spoilage. Therefore, it can be preserved by drying or other methods and then for lycopene extraction. Tomato carotenoids are liposoluble.

Recently, there are several methods used for lycopene extraction. Sabio et al. (2003) studied a lycopene extraction process based on supercritical CO2, which allows the extraction of over 60% of 1 LUAN VAN CHAT LUONG download : add luanvanchat@agmail.com the lycopene from tomato waste. Xi (2006) reported that the lycopene yield from high pressure processing treatment of tomato paste waste for 1 min was much higher than from solvent extraction for 30 min.

However, lycopene is commonly extracted with organic solvents due to the cheap cost of technology and better recovery as compared to other methods. There are a lot of organic solvents, which are usually used in several studies to non-polar carotenoid extraction such as ethyl acetate, ethanol, acetone, etc. However, their parameters (solvent/material ratio, temperature and time) are largely influence on lycopene extraction. Therefore in the current study, we conduct research entitled “Optimization of some factors influencing lycopene extraction from tomato processing waste using response surface methodology”.

General objective The aim of this research is to optimize some factors (solvent/material ratio, temperature and time) influencing lycopene extraction process from tomato waste which could be used to produce functional foods. Specific objectives - To select suitable organic solvent for lycopene extraction process from dried tomato waste; - To optimize the moisture content and drying temperature by convective drying of tomato waste for lycopene extraction; - To optimize several factors (ration of solvent/material, temperature, time) influencing on extraction of lycopene from dried tomato waste; - To characterize the extracted lycopene in term of lycopene content and anti-oxidant activity. 2 LUAN VAN CHAT LUONG download : add luanvanchat@agmail. Origin and distribution of tomato Tomato (Lycopersicon esculentum Mill.) is one of the most widely cultivated vegetable worldwide.

Tomatoes are members of the family Solanaceae (also known as the nightshade family), genus Lycopersicon, subfamily Solanoideae and tribe Solanceae (Taylor, 1986). It was originated in the coastal highlands of Andean region that includes parts of Chile, Colombia, Ecuador, Bolivia and Peru (Sims, 1979). The Spanish introduced tomato into Europe in the early 16th century (Harvey et al. European acceptance of tomato as a cultivated crop and its inclusion in the cuisine were relatively slow.

Tomatoes were initially grown only as ornamental plants: the fruits were considered to be poisonous, because of the closely related deadly nightshade (Solanum dulcamara).
