I. Giới thiệu

Nghiên cứu này tập trung vào việc sử dụng thân cây chuối như một nguồn thức ăn tiềm năng cho lợn địa phương Kandol tại tỉnh Ratanakiri, Campuchia. Mục tiêu chính là cải thiện hiệu suất của lợn địa phương trong điều kiện nông thôn miền núi. Tình hình sản xuất lợn tại Ratanakiri cho thấy rằng nông dân thường nuôi từ 3-5 con lợn mỗi hộ gia đình, với chế độ ăn chủ yếu từ thân cây chuối. Việc sử dụng thân cây chuối không chỉ giúp giảm chi phí thức ăn mà còn tận dụng nguồn tài nguyên thực vật sẵn có trong khu vực.

1.1. Tình hình sản xuất lợn tại Ratanakiri

Tỉnh Ratanakiri có một hệ thống sản xuất lợn chủ yếu dựa vào các nguồn thức ăn địa phương. Nông dân thường sử dụng thân cây chuối và các sản phẩm nông nghiệp khác như thức ăn cho lợn. Việc nuôi lợn địa phương Kandol có nhiều lợi thế, bao gồm khả năng thích nghi tốt với điều kiện khí hậu và môi trường khắc nghiệt. Tuy nhiên, sản xuất lợn vẫn gặp nhiều thách thức như thiếu kiến thức kỹ thuật và nguồn thức ăn không ổn định.

II. Tác động của việc sử dụng thân cây chuối

Việc sử dụng thân cây chuối trong chế độ ăn của lợn Kandol đã cho thấy những tác động tích cực đến hiệu suất tăng trưởng và chất lượng thịt. Nghiên cứu cho thấy rằng việc bổ sung thân cây chuối vào khẩu phần ăn có thể cải thiện khả năng tiêu hóa và tăng trưởng của lợn. Các thí nghiệm cho thấy rằng lợn được cho ăn chế độ có chứa thân cây chuối có tỷ lệ tăng trọng cao hơn so với nhóm đối chứng. Điều này cho thấy thân cây chuối không chỉ là nguồn thức ăn rẻ mà còn có giá trị dinh dưỡng cao.

2.1. Giá trị dinh dưỡng của thân cây chuối

Nghiên cứu đã chỉ ra rằng thân cây chuối có thể cải thiện giá trị dinh dưỡng của thức ăn cho lợn. Qua quá trình lên men với Saccharomyces cerevisiae, giá trị dinh dưỡng của thân cây chuối được nâng cao, đặc biệt là protein và chất xơ thô. Việc này không chỉ giúp lợn tiêu hóa tốt hơn mà còn tăng cường sức khỏe đường ruột của chúng.

III. Ứng dụng thực tiễn và triển vọng

Việc áp dụng thân cây chuối như một nguồn thức ăn cho lợn địa phương Kandol có thể mang lại nhiều lợi ích cho nông dân tại Ratanakiri. Không chỉ giúp giảm chi phí thức ăn, mà còn góp phần vào việc phát triển nông nghiệp bền vững trong khu vực. Sự kết hợp giữa thân cây chuối và các nguồn thức ăn khác có thể tạo ra một chế độ ăn cân bằng, giúp nâng cao năng suất chăn nuôi. Điều này có thể thúc đẩy kinh tế địa phương và cải thiện đời sống của người dân.

3.1. Tương lai của sản xuất lợn tại Ratanakiri

Với việc áp dụng các phương pháp chăn nuôi hiện đại và sử dụng thân cây chuối như một nguồn thức ăn chính, sản xuất lợn tại Ratanakiri có thể phát triển mạnh mẽ hơn. Nông dân cần được đào tạo về kỹ thuật chăn nuôi và cách sử dụng các nguồn thức ăn địa phương một cách hiệu quả. Điều này không chỉ giúp nâng cao năng suất mà còn bảo vệ môi trường và phát triển bền vững cho cộng đồng.

In this thesis, four studies were performed to meet main specific objective. In the first study, nine villages of 3 communes and 3 districts with totally 126 respondents were sampled for this study in order to understand the situation of pig production of farmers in mountainous Ratanakiri province. As result, all famers preferred keeping local pigs in the range of 3-5 heads per family and the pigs were fed for 8-12 months to get the marketable weight of 30-40 kg (ADG 120g/day) with the diet composed of banana stems 3.8% as DM basic that consisted of 2,257 kcal ME/kg DM and 7. In the second study, the experiment was followed by nested model with 3 replicates to determine the effects of time, C/N ratio and molasses concentration on yeast of S.

cerevisiae biomass production. It was found that the application of C/N ratio at 10/1 as substrate for 24 hours was able to improve biomass production of Saccharomyces cerevisiae. In the third study, the experiment was designed, following to completely randomized design (CRD) with four treatments and 4 replicates in the purpose of improvement of nutritive values of banana stems by fermentation with Saccharomyces cerevisiae solution. As result, the fermentation of banana stems with the addition of Saccharomyces cerevisiae solution could improve their nutritive values, mainly true protein and crude fiber in the period of 7 days, compared to the ones without any addition of Saccharomyces cerevisiae solution.

In the last study, the experiment was designed by the randomized completely design (RCD) with 5 dietary treatments and 4 replicates to determine the optimum inclusive level of fermented banana stems in the diets on apparent digestibility, growth performance and carcasses quality of local pigs. Problem statement Cambodia population is over 16 million, annually growth rate of 1.5% and population density of about 91 habita per km 2 in 2018.

Agriculture is one of three economic sectors which contributed 26.3 % of national GDP in 2016. Livestock sub-sector contributed about 2.8% to the national economy and 11.96% of agricultural GDP (MAFF, 2017). However, pig production shared about 48% of the total livestock production (FAO, 2011). In 2016, pig population was reached 2,970,624 heads (annually growth rate 2%), and 98% of pig population produced by smallholders (MAFF, 2018).

About 5% of smallholders raised local breeds (Borin et al., 2012), due to more resistant to infectious diseases and more adapting to local climate frequency and environment and they also have a higher capacity to digest higher fibrous feed and more reproductive than exotic ones (Rodríguez and Preston, 1997; Len et al. The smallholders have turned in a very low level of production due to low input and lack of technical knowledges and experiences in animal husbandry (Wallberg et al.7% of smallholders fed their pigs with local resources and agricultural byproducts (Borin et al.
