I. Tổng quan cassava starch oxidation tại HCMUTE 2025

4.1. Ứng dụng E1404 trong chế biến thực phẩm

Tinh bột biến tính E1404 giữ vai trò then chốt trong công nghiệp chế biến hiện đại.

This study aimed to systematically evaluate how simultaneous changes in reaction time (10–60 min), NaOCl concentration (1,000–20,000 ppm), and pH (8–11) affect the properties of oxidized cassava starch. The objective was to model these interactions to enable the production of starches with specific functionalities.

Using a Response Surface Methodology (RSM) with a Face-centered Central Composite Design (CCF), the study found that oxidation profoundly altered starch properties. The modification caused significant depolymerization, confirmed by FTIR analysis. This led to decreased kinematic and pasting viscosity, reduced swelling power, and increased solubility. Paste clarity also generally improved due to inhibited retrogradation.

Textural properties such as hardness, gumminess, and chewiness showed a complex, non- linear relationship with reaction conditions, particularly oxidant concentration. This resulted from a competition between structural weakening via chain scission and structural reinforcement via enhanced retrogradation of shorter polymer chains. Similarly, pasting analysis revealed increased paste stability (lower breakdown) and a highly tunable gelling tendency (setback viscosity), which could be either suppressed or enhanced by adjusting reaction parameters, especially pH. In conclusion, this research demonstrates that oxidative modification is a highly versatile tool.

By carefully controlling the interplay between reaction time, oxidant concentration, and pH, it is possible to produce 'tailor-made' starches with a wide spectrum of functional properties. The findings allow for the design of specific starches suitable for diverse food applications, such as canned sauces requiring high stability, instant noodles needing strong gelling, or frozen products demanding a soft, stable texture xxiii CHAPTER 1: INTRODUCTION 1. Problem statement Starch, the primary energy storage polysaccharide in plants, is of great importance to human life and has a long history of application in various sectors, ranging from food, textiles, and paper to pharmaceuticals and biomaterials. The gelling capacity, viscosity- imparting nature, and adhesive properties of starch have been exploited for thousands of years through traditional food processing methods such as porridge preparation, baking, and noodle production.

Among the common starch sources, cassava and rice starches are of particular significance, especially in Asian countries. Cassava starch, extracted from the root of the tropical crop Manihot esculenta, is widely utilized due to its low cost, high viscosity, good gelling ability, and abundant supply[1]. The production and consumption of cassava starch are predominantly concentrated in developing countries. However, native starch, regardless of its origin, often exhibits certain property limitations that render it unsuitable for modern industrial applications.

These limitations include: a propensity for retrogradation over time, leading to alterations in gel structure and firmness; viscosity instability under fluctuating temperature and pH conditions; poor gelling capability under specific conditions (e., highly acidic environments); and limited solubility. To overcome these drawbacks and broaden the applicational scope of starch, scientists have developed various starch modification methods. One of the most widely used and commercially significant types of modified starch is oxidized starch, designated as E1404 under the International Numbering System (INS) for food additives. Oxidized starch is produced by treating starch with oxidizing agents, most commonly sodium hypochlorite (NaOCl), under strictly controlled conditions of temperature, pH, and concentration [2].

E1404 starch is widely applied in the food industry as a thickening and stabilizing agent, for instance, in products such as gummy confectionery, sauces, soups, and food coatings [3]. The continuous development of modified starches, including E1404, has been and continues to open up new potential applications, meeting the increasingly diverse and stringent demands of various industries. Numerous previous studies have focused on the influence of various factors on the degree of starch oxidation. For instance, effect of hypochlorite levels on the modification of cassava starch [4], properties of oxidized cassava starch as influenced by oxidant concentration and 1 reaction time [5], physicochemical properties of oxidized cassava starch prepared under various alkalinity levels [6].

However, in those studies, influencing factors such as sodium hypochlorite concentration, reaction time, and alkalinity were typically investigated individually. The research on the combined and interactive effects among these factors remains very limited. Based on this rationale, the study aims to systematically investigate the changes in the physicochemical properties of oxidized starch under the simultaneous influence of three factors: reaction time, oxidant concentration, and pH. Research objectives This study focuses on clarifying the effects of different levels of oxidative modification (E1404) on the physicochemical properties of cassava starch gels.

Specifically, the study will analyze the effects of three factors: reaction time, reagent concentration and pH range. Using the CCF model to evaluate the changes in objective functions such as carbonyl/carboxyl content, kinematic viscosity, solubility, swelling power, transmitance, hardness, adhesiveness, cohesiveness, gumminess, resilence, chewiness, springiness. Scope of study Native cassava starch was chemically modified using sodium hypochlorite (NaOCl) to produce samples with various degrees of oxidation. A Face-centered Central Composite Design, a type of Response Surface Methodology (RSM), was implemented to design the experiment.

The oxidant concentration, pH level, and reaction time were selected as the independent variables, while the resulting starch characteristics were evaluated as the target responses. In this study, the following contents were conducted: Production of modified starch e1404 with different degrees of modification. Study of changes in physicochemical properties according to modified levels.
