2.1. Biến đổi hoạt tính sinh học và màu sắc

Màu sắc sô cô la đen truyền thống do sắc tố men ca cao tạo thành.

PBR powder was incorporated at substitution levels of 0%, 15%, 30%, 45%, and 60% (w/w), in combination with conching times of 2, 4, 6, 8, 10 hours. Key quality attributes analyzed included heat resistance, color, texture (hardness), rheological behavior, melting characteristics, microstructure, nutritional composition, and sensory acceptance. The results revealed that substituting 30% of cocoa powder with PBR powder effectively preserved heat resistance and minimized undesirable color shifts, while delivering a harmonious flavor profile that balanced the traditional cocoa taste with the unique aromatic notes of PBR. A 10-hour conching process was found to significantly enhance the chocolate’s hardness, smoothness, and surface gloss, without adversely affecting its heat resistance or color stability.

Furthermore, the final dark chocolate product containing 30% PBR exhibited nutritional, microbiological, melting, and microstructural properties comparable to the 100% cocoa powder control sample. Sensory evaluations confirmed that the 30% PBR formulation was preferred for its distinctive flavor and overall acceptability. Importantly, this formulation also demonstrated stable color and texture retention over a 30-day storage period at 4°C.
