ABSTRACT Meat is the main source of food in life and in the food industry, with our country's climate favorable for livestock raising and for high annual meat production. In the future, the family farming will be gradually eliminated and the farm-based industrial model will give higher productivity and meat quality. Therefore, the manufacture of machines for processing and preservation is very urgent and practical It can be said that most of the high-value products come from meat processing.
However, today, meat cutting is mainly a manual, semi-automatic job depending on the skill of the worker. Cutting meat in large quantities is not productive, takes a lot of time and effort, and especially labor safety is not guaranteed. Therefore, our group decided to do the topic "Research, propose solutions" to overcome some of the above limitations. During the implementation process, we understood the principles of meat removal, applied relevant knowledge to make a model of the machine to evaluate the actual results.
As a result, the topic has been researched, designed and calculated. However, in the process of working we still have some design limitations. The design stages are not optimal, the manufacturing model has not reached the optimal material and machining accuracy because we do not have enough practical experience, finance and time are limited. In the future, we will try to design and manufacture to ensure the harmony between economic and technical factors.
At the same time, we will promote market exploration and customer needs to be able to put the product into application in life. TÓM TẮT Thịt là nguồn lương thực chính trong đời sống và trong công nghiệp thực phẩm, với điều kiện khí hậu nước ta thuận lợi cho chăn nuôi gia súc và cho sản lượng thịt hàng năm cao. Trong tương lai, hình thức chăn nuôi gia trại sẽ dần bị xóa bỏ và chuyển sang mô hình trang trại công nghiệp sẽ cho năng suất và chất lượng thịt cao hơn. Vì vậy, việc chế tạo các loại máy chế biến, bảo quản là rất cấp thiết và thiết thực.
Có thể nói, hầu hết các sản phẩm có giá trị cao đều đến từ chế biến thịt. Tuy nhiên, ngày nay, việc xẻ thịt chủ yếu là công việc thủ công, bán tự động tùy thuộc vào tay nghề của người thợ. Việc xẻ thịt với số lượng lớn không đạt năng suất, tốn nhiều thời gian, công sức và đặc biệt là không đảm bảo an toàn lao động. Vì vậy, nhóm chúng em quyết định thực hiện đề tài “Nghiên cứu, đề xuất giải pháp” nhằm khắc phục một số hạn chế trên.
Trong quá trình thực hiện, chúng em đã nắm được nguyên lý bóc tách thịt, vận dụng các kiến thức liên quan để làm mô hình máy nhằm đánh giá kết quả thực tế. Kết quả là đề tài đã được nghiên cứu, thiết kế và tính toán. Tuy nhiên trong quá trình làm việc chúng tôi vẫn còn một số hạn chế về thiết kế.
